I suggest you try dissolve the carbohydrate in metanol and then add the
acylating agente (is it an anhydride, isnīt it? it wonīt work with acid
chlorides). In few minutes you can get the N-acilated derivative (you see
it easily by TLC) by neutralizing the reaction media with sodium
bicarbonate, filtering the salt off and destilling metanol in rotatory
evaporator . I tried this with a 6-amino-6-deoxi-unprotected glicoside and
it did get fine.
