Why not chuck in some PCC in DCM followed by a Celite and ether workup
(recall Celite will "chew up" the chromium tar at the end of the
reaction and Cr(IV) isn't soluble in etherial solvents). Should work
(given the slight steric crowding around the -OH); shouldn't affect your
Cbz PG.

I am currently trying to oxidize Cbz-Phe-ol (Cbz protected phenylalaninol)
to the corresponding aldehyde. I just need to isolate the crude aldehyde
and take it on to a reductive amination. Any suggestions or hint for DMP
and Swern oxidations?
