Hi!
Acetylation with acetic anhydride is usually best, acetyl chloride gives out HCl which hydrolyses starch. Using different quantities of acetic anhydride will give you different degree of acetylation since it is a poly saccharride. General books on polysaccharrides/starches, you may even find them online will give you this information.
