Hi! Acetylation with acetic anhydride is usually best, acetyl chloride gives out HCl which hydrolyses starch. Using different quantities of acetic anhydride will give you different degree of acetylation since it is a poly saccharride. General books on polysaccharrides/starches, you may even find them online will give you this information. I need to perform a acetylation on starch and I intend to have different degrees of acetylation. Does anybody have a procedure to do that? Thanks in advance!
