For temperature levels we are discussing it may be advisable to use secondary cooling system ( For lab scale - low temperature bath ) .
LIN may be primary utility with secondary utility being a solvent / synthetic fluid thus avoiding need of mixing the two.
For very low temperature applications one may go for super critical fluids.

I am just curious to know how can one generate (and esp. maintain) a temperature, say below -78, by mixing liquid N2 and a organic solvent. Obviously it's not possible to saturate the solvent with N2... it'll just freeze instead.

Go to http://ecompound.com/Reaction%20reference/reaction_index.htm, check reference in Org. Chem. There is a table that tells you the common condition to generate a low temp. bath. -160oC might be the lowest you can have.
