Dear Antonio,
for the non-aq. diazo reactions followed by reaction with a nucleophile, preferred solvent is glacial acetic acid. But you must be sure that it does not react with the nucleophile you have in mind, in case of hydroxy group as a product one may end up with an acetate group.
